The Pink Bourbon beans are fermented for 48 hours. The process begins after the carefully harvested cherries are pulped, but with a layer of mucilage left intact. A thin layer of beans is spread on drying beds and monitored throughout the fermentation process. Once ready, the coffee is moved to raised beds and sun-dried for 14 to 18 days, depending on the weather.
