Almost 40% of the cherries that arrive at Gisheke are transported by boat from the Mushungwe Island. This particular lot is naturally processed, in which the coffee after being sorted and cleaned, is evenly laid across raised beds which provide consistent airflow and protection from animals or insects. The coffee is then dried for 30 days, constantly being turned when the sun is high in the sky and then covered at night. Once the cherry is fully dried, the outer fruit is removed and the beans are ready to be sorted and packed.
