Understanding Coffee Roasts & Flavours
Light Medium Roast:
- Appearance: Light brown, dry surface.
- Flavour: Bright, punchy acidity that lets the original bean's unique fruity or floral notes take centre stage. Think nuanced and delicate.
- Roast Time: Shortest roast time, typically 7-9 minutes.
- Roast Temperature: Reaches an internal bean temperature around 180−205°C (355−400°F), pulled right at or just before the 'first crack.'

Medium Roast:
- Appearance: Medium brown, mostly dry.
- Flavour: Balanced acidity and body. A blend of origin character and roast-developed sweetness (caramel, chocolate, nuts) for versatility without compromise.
- Roast Time: Longer than light, typically 9-12 minutes.
- Roast Temperature: Reaches an internal bean temperature of 210–220°C (410–428°F), roasted past 'first crack,' stopped just short of 'second crack.'

Dark Medium Roast:
- Appearance: Darker brown, some visible oil.
- Flavour: Full-bodied, low on acidity. Roast notes hit harder, unleashing richer, bolder flavours like dark chocolate and a hint of smokiness.
- Roast Time: Longer than medium, typically 12-14 minutes.
- Roast Temperature: Reaches an internal bean temperature of roughly 225−230∘C (437−445∘F), roasted into the beginning stages of the "second crack."

Dark Roast:
- Appearance: Very dark, oily surface.
- Flavour: Low acidity, full-bodied and unapologetically bold. Dominated by smoky, bittersweet flavours with notes of charcoal or dark chocolate. Original bean flavours are largely gone.
- Roast Time: Longest roast time, typically 14-20 minutes.
- Roast Temperature: Reaches an internal bean temperature of roughly 240−250∘C (465−482∘F), roasted well into or even past the 'second crack.'

- Floral/Exploratory: Pour-over & AeroPress brewing methods with precise control over temperature and grind size let delicate floral and nuanced notes stand out by allowing for a clean, filtered cup.
- Rich: French press or espresso enhance richness and body with their immersion brewing or pressurised extraction, respectively.
- Sweet: Methods like drip coffee, pour-over or cold brew bring out the natural sweetness of the beans, creating smooth, low-acidity, seriously sip-worthy coffee.
Acidity is the spark that stops a coffee from tasting flat. That mouthwatering, zesty kick in your cup that wakes you up.
The sweet side of acidity: A hit of acidity cranks up that sweet sensation. Making caramel, honey and fruit notes pop.
Bringing out the florals: That bright, tangy kick doesn’t just wake your taste buds, it lets florals like jasmine and rose bloom bold.
'Body' is all about that mouthfeel. The thinness, thickness or firmness you feel after a sip.
- Lighter-bodied coffees (often light roasts) don’t shout, they whisper. Making delicate floral and exploratory notes hit with lift, not weight.
- Fuller-bodied coffees (often darker roasts or specific origins like Sumatra) are rich, weighty and unapologetically bold, loaded with deep chocolate or earthy notes.
The coffee 'process' is where the bean earns its soul. It’s the raw, hands-on ritual of removing the seed (bean) from its cherry after harvest. This changes everything. It's where fermentation fires up, sugars get wild and flavours take shape. This isn’t just processing. It’s where a brew’s attitude is born.
1. Natural (Dry) Process:
- Method: We dry the whole coffee cherry, fruit, skin and all. No shortcuts. No stripping it down. Allowing the bean to soak up every last drop of the fruit’s wild sweetness, emerging bold and buzzing with character.
- Flavour Impact: Expect a riot of sweetness with fruity notes of bold berries, wild tropicals, even a splash of wine-like funk. This isn’t your clean-cut cup. It’s the untamed side of coffee, full-bodied, low on acidity, and intense.
2. Washed (Wet) Process:
- Method: The coffee cherry’s skin and pulp are removed shortly after harvest. The beans, still coated in sticky mucilage, are fermented in water tanks, breaking down that stubborn layer. Once clean, they’re dried, turning raw fruit into the essence of coffee.
- Flavour Impact: Clean, bright, and sharp. This coffee lets the bean do the talking. Expect crisp citrus, subtle florals, and pure fruit notes that highlight the origin. Simple, honest and vibrant.
3. Honey (Pulped Natural/Semi-Washed) Process:
- Method: A hybrid method where the cherry skin is stripped from the bean, leaving some of the sticky mucilage to dry. How much is left on the bean impacts the flavour. Less gives you notes of “yellow honey,” more gives you “black honey.”
- Flavour Impact: This process strikes the sweet spot between raw and refined. Honey-processed beans hit you with natural sweetness, smooth acidity, and a medium body that just works. Think fruity characteristics, but with a sharper, cleaner, more defined taste than natural coffees, with notes that swing from caramel and nuts to hints of tropical fruit.

Too much of a good thing, eh. If you’re not going to be around for a while you can pause your subscription by logging into your customer account. Once in, you can pause and choose a resume date that works for you.
Once you’ve purchased your subscription, you’ll be sent an email that gives you access to your online account. You can manage your personal details, as well as pause or cancel your subscription. Cancellation is effective immediately.
Payments are charged to the credit or debit card details you provided at checkout. The first payment will be charged upon completion of your transaction and your first order will be dispatched on the next production day. Payments will then be taken at your chosen interval (weekly, fortnightly or monthly) based on your initial sign-up date.
We roast all our coffee to order. Any scheduled orders before 09:00am GMT on Monday will be processed, roasted and shipped on Tuesday. Any orders placed before 09:00am GMT on Wednesday will be processed, roasted and shipped on Thursday.
All subscription orders are dispatched using Royal Mail 48 (Tracked).
You need to go outside sometimes, understood. If you subscribe to either a 250g subscription (our most popular weight!), you won’t even need to be around to take receipt. Our coffee bags/ boxes have been custom made to fit through the average sized UK letterbox.
In short, no. It was a gift, take it and don’t be awkward.

We don’t do Fairtrade. We do Direct Trade. Cutting out the middlemen, paying for quality and owning every step of the journey.
When it comes to coffee, the people on the ground know the game best. Fairtrade has done a lot of good for the coffee industry, but it comes with restrictions that can affect how producers work. That’s why we back our growers to do it their way. Just sustainable craftsmanship that speaks for itself.
We're not chasing profit. It may fuel the grind, but our coffee is all about balance. We make fair, sustainable choices that consider everyone in our supply chain. Always growing, tweaking and refining, we stay accountable, making sure to do right by the people who make it all possible.
Treat your coffee right and lock it up tight in a sealed container. Store in a cool, dark area away from direct sunlight to keep it fresh, bold and full of flavour.
All of our coffee bags are fully recyclable.
We use Post-Consumer Recycled (PCR) plastic, meaning our bags are made from old recycled bottles, giving a second shot to pre-used plastic.
If you spot our '4 LDPE' recycling symbol, that means it's Low-Density Polyethylene, which can be recycled, but not every local council is set up to handle it. Check your local recycling guidelines before throwing.
Lastly, check your bag for the classic Mobius loop (the trio of chasing arrows.) That means your bag’s had a second shot at life. Not every recycling facility will take it, but it’s our way of owning the 'reduce, reuse, recycle' mentality.
How much you’ll need boils down to a few things. From how many cups you brew a day, to how many coffee fiends you live with and whether you’re using a filter or espresso machine setup. To help you choose, here’s our quick guide based on a 15g dose for filter coffee and an 18g dose for espresso.
- 1 x 250g bag = 13-16 cups
- 2 x 250g bag = 26-32 cups
- 3 x 250g bag = 39-48 cups
- 1 x 1kg bag = 52-64 cups
Our whole bean and ground bags come in doses of 250g, 500g and 1kg. For a quick and easy brew, our Nespresso-compatible capsules come in convenient packs of 10, 30, 50 or 110.
